Mini Oatcakes with Gravlax and Crème Fraîche

Oatcakes can almost be considered a staple of the Scottish diet. These traditional, earthy biscuits lend themselves to being served at any time of the day, depending on what they are topped with. The rough texture of this version is complemented perfectly by the rich, velvety gravlax and crème fraîche. But these rustic miniature oatcakes are just as good with farmhouse butter, cheese, jam, or honeycomb. Oatcakes are traditionally round, but they can be made in any shape, from scalloped roun
