You can make a traditional habesha digestive tea by adding a shot of ouzo. Ouzo, called areki or arek in Tigray, is used as a digestive after a heavy meat meal. Despite popular conception, ouzo/areki extends beyond the Greek culture and is enjoyed by various countries in Eastern Europe and is very popular in Ethiopia.

Ingredients

  • 1 teaspoon whole cloves
  • 1 teaspoon whole cardamom pods
  • 2 large

Method

Lightly crush the cloves and cardamom to release more flavour.

Put all the spices and sugar in a stove-top teapot with 4 cups (1 litre) of water, and place over low heat. Bring it to a simmer.
