Why do you make it deconstructed? Well, running a restaurant with your mother is challenging enough without you giving her the impossible task of folding gluten-free pastry without it falling apart. Samosas, although not traditionally Tigrayan, have become a popular snack and street food influenced by returnees from the Middle East and North Africa. The filling is different to the traditional recipe as we usually use the green lentil stew made thicker, or
