Ingredients

  • 3 tablespoons Demerara or palm sugar
  • 6 tablespoons water

Method

  1. Put the sugar, water, vinegar, garlic and salt in a heavy-based saucepan and bring to the boil. When the sugar and salt have dissolved, reduce the heat and simmer the mixture until it has slightly reduced and thickened.
  2. Add the chilli sauce and leave to cool, then pour into a sterilized jar and leave for a couple of days before using.
