This is excellent with fish and seafood and any fresh vegetables.

Ingredients

  • 225 g/8 oz shredded green (unripe) mango
  • 6–8 garlic cloves, peeled and finely minced

Method

  1. Put the mango, garlic and shrimp paste in a mortar and gently pound with a pestle to combine, but not mash, them.
  2. Add the rest of the ingredients and mix well.
