Ingredients

  • 5 tablespoons vegetable oil
  • 8 garlic cloves, peeled and finely chopped
  • 3 red shallots

Method

  1. Heat the oil in a wok or frying pan and fry the garlic until just turning brown, then remove and put to one side.
  2. Do the same with the shallots.
  3. Fry the chillies for a couple of minutes, then remove from the pan and, using a pestle and mortar, pound together with the shallots and garlic to a paste.
