Makes one serving, multiply as necessary

Ingredients

  • 75 ml/3 fl oz vegetable oil
  • 2 red shallots, peeled and finely chopped

Method

  1. Heat the oil in a small saucepan and gently fry the shallots and garlic until just turning golden.
  2. Add the chilli flakes and sugar and stir until well mixed.
  3. Taste the sauce and season with salt as required.
