  • 3.5 cm/ inch piece pork fat, finely chopped
  • 4 garlic cloves, peeled and finely chopped

Method

  1. Heat some oil in a wok or heavy-based frying pan. When the oil is hot, add the pork fat, garlic, ginger and chilli and stir-fry for a couple of minutes.
  2. Add the diced chicken and pork and stir-fry for 3–4 minutes, or until the meat is golden and cooked through.
