Ingredients

  • 2 red shallots, peeled and chopped
  • 3 dried red chillies

Method

  1. Put the shallots and chillies in a spice grinder and grind to a paste.
  2. Heat the coconut milk and water in a wok or heavy-based frying pan until it boils and the oil from the coconut milk starts to separate.
  3. Add the shallot mixture and cook, stirring, for about 3 minutes.
