  • 2 tablespoons long-grain rice
  • 450 g/1 lb minced lean beef

Method

  1. Heat a heavy-based pan and dry-fry the rice until brown, then grind to a powder in a spice grinder or food processor.
  2. Mix the minced beef with the lime juice, fish sauce, galangal or ginger and the shallots.
