Ingredients

  • 1 tablespoon long-grain rice
  • 275 g/10 oz minced raw duck meat

Method

  1. Heat a heavy-based pan and dry-fry the rice until brown, then grind to a powder in a spice grinder or food processor.
  2. Stir-fry the duck, lime juice and fish sauce in a wok or heavy-based frying pan until dry and browned. Tip into a bowl.
