- Dry-fry the pork in a heavy-based frying pan, stirring until the pork is half cooked.
- Add the peanuts and continue to stir-fry until the pork is cooked. Drain off any cooking liquid and place the pork and peanuts in a bowl.
- Mix in all the remaining ingredients except the lettuce, until thoroughly amalgamated.
- Lay the lettuce leaves on a serving
