Pandanus leaves stuffed with chicken

You might have to search long and hard to find fresh pandanus leaves (which come from the screw pine), but if you can find them, this is a great little snack dish. However, you may be able to buy them frozen, in which case, defrost them carefully and dry them thoroughly before using.

Ingredients

  • 600 g/1 lb 5 oz skinless chicken breast fillets, cut into bite-sized cubes

Method

  1. Prepare the marinade. Using a small food processor or spice grinder, whiz the garlic, coriander roots, salt and white pepper to a paste.
  2. Tip the paste into a bowl, add the oyster sauce, sesame oil and flour and mix well.
  3. Add the chicken and mix thoroughly so that the chicken is well coated, then cover and leave in the fridge for at least 4–5 hours.
