Ingredients

  • 1 litre/ pints vegetable stock
  • 225 g/8

Method

  1. Pour the stock into a large pan and bring to the boil.
  2. Add all the remaining ingredients except the coriander, reduce the heat and simmer, uncovered, until the mushrooms are just cooked.
  3. Serve garnished with the chopped coriander.
