Ingredients

  • 3 medium, dried red chillies
  • 2 red shallots, peeled
  • 2 garlic cloves, peeled

Method

  1. Dry-fry the dried chillies in a wok or heavy-based frying pan over a low heat until dark and giving off their fragrance. Remove from the pan and, when cool, remove the stems and deseed them.
  2. In the same pan, dry-fry the shallots and garlic over a low heat until soft and blistered. Remove from the pan and, when cool, slice finely. Set aside.
