Sweet Beef Goulash with Smoked Paprika

Smoked paprika, also known as pimentón de la Vera, is a signature Spanish spice. I realize it is probably heresy to employ its oaky, smoked nuance in the iconic stew of Hungary, the paprika capital of Europe, where the spice is taken very seriously and is never, ever smoked.
