Rice is disastrous in a slow cooker. It gets mushy, broken, sticky, and sodden. But rice pudding—that’s another matter. In fact, the very deficiencies of slow-cooked rice turn into assets in a pudding. Although it can be made with any rice, I find that a medium- or short-grained rice, like Arborio, gives the creamiest results. This pudding is perfumed exotically with fresh mint and sour cherries.
