You’ve only got to look at this soup and you can imagine your muscles growing like a certain cartoon character. Spinach can often have a slightly bitter, metallic taste when overcooked, so I add it right at the end of this recipe, giving it a chance to just wilt before blending. Doing this also retains the vibrant green colour of the leaves.
