When I crave a light, refreshing broth, I turn to this every time. It’s packed with bright flavours and is pretty speedy to make too. I don’t use my spiraliser for many things, but for this I dust it off and give it a go. Using courgette noodles is a lighter alternative to using egg, wheat or rice noodles in the broth, but if you want to bulk it out then by all means forget the courgette and use real noodles instead.
