This makes twice the amount of pesto you’ll need for serving, but it’s worth making extra. Use it to serve another day with roasted root vegetables, an alternative to mint sauce with roast lamb, or stirred through risotto or pasta with some fresh peas and asparagus.

If you can get hold of burrata for this recipe it’s a real treat – a naughty one at that, as it’s rich mozzarella cheese filled with cream. Buffalo mozzarella is a great back-up choice though, and somewhat easier to get
