Sometimes simple is best and that’s the rule I’ve followed here. There’s a lovely contrast of flavours and textures coming from the luscious, juicy figs, tangy oranges, creamy goat’s cheese and sweet, crunchy walnuts. These are all brought together by the piquant, zesty dressing.

Ingredients

  • 100 g/ oz walnut halves
  • 3 tbsp caster (superfine) sugar

Method

First of all, make the dressing. Place all of the ingredients in a small, clean jar, season with salt and pepper, and shake well until combined. Alternatively, whisk together in a small bowl.

Heat a frying pan over a medium heat. Add the walnuts, sugar and butter. Toss around until the butter and sugar melt and start to caramelise, coating the walnuts. Remove from the heat and tip onto
