When in season, nectarines or peaches are both delicious served on top of this aromatic pilaf. I’ll often make the pilaf at other times of the year, just to remind me of those lovely summer days, so I swap the nectarines for other seasonal fruits such as figs or plums.

There’s also a lovely recipe for tzatziki here, which is best made ahead of time to give the flavours a chance to infuse.
