This is such a handy recipe for any time of the year. You start with the same creamy ricotta cheese base spread on to puff pastry, then mix and match your toppings depending on what’s in season or whatever you fancy using.
You can make one large tart, but I quite like to make these as individual tarts as you have the option of customising them by adding meat or fish.
