This is a satisfying and wonderfully healthy salad that has everything covered: nutritious crunchy greens, protein and fibre. But really the best thing about this is the cashew and lime dressing – it’s something you can make time and time again for other salads or even as a dip. Once made it will keep for up to 5 days in the fridge, just give it a good stir before using.
