A vegetable tagine is a great go-to dinner party dish as it can be prepared ahead of time then gently heated through when needed. This particular recipe is rammed full of spices and aromatic flavours, and I’ve also included some chickpeas to give it protein. It’s pretty filling by itself, though you could serve it with some buttered couscous to soak up the juices.
