A dressing can make or break a salad, and making your own from scratch needn’t be difficult or time consuming.
Place all of the ingredients in a screw-top jar and shake well. Season with salt and pepper. Taste and add any extra vinegar, honey or mustard if you think it’s needed. The ingredients you use can vary hugely in their strength, so always taste as you go.
If you can, leave for at least 1 hour for the garlic flavour to infuse into the dressing. Store any remaining dressing in a cool place
