This Asian-inspired creamy dressing is lovely tossed into a noodle salad with raw veg. You can add it to an Asian coleslaw tossed with crushed peanuts, or simply drizzle over crunchy green salad leaves and crisp spring onion.

Ingredients

  • 100 g/ oz silken tofu
  • 3 tbsp rice vinegar

Method

Simply place everything in a small blender and blend until smooth, adding more water if needed.

Keep in the fridge and use within 3–4 days.
