In contrast to the two pestos, this one takes a bit of planning as the tomatoes are slow-roasted in the oven to bring out their natural sweetness.
This pesto is a perfect partner for flatbread dippers, or as an alternative to tomato sauce on a pizza. You can also mix with breadcrumbs to top gratins or baked fish, knead into bread dough before baking, stir through couscous or top bruschetta and crostini.
