A traditional Finnish Christmas dish, this baked pudding combines mashed swede with butter and cream to make a delicious vegetable accompaniment. The texture of swede is quite dense compared, for example, with parsnip, so you will need to cut it into relatively small dice or allow for extra cooking time.

Ingredients

  • 1 large swede (rutabaga), diced

  1. Put the diced swede in a large pan and cover generously with water. Bring to the boil, lower the heat and simmer for about 20 minutes until tender. Remove the pan from the heat and leave the swede to cool in the water for about 30 minutes. Drain well and mash the swede.
