This cucumber salad is made in two parts. First, the cucumber is salted and pressed to extract its juices and then it is squeezed to produce a different textured salad, which is dressed in a sweet-and-sour sugar and vinegar mixture. With a dollop of sour cream it makes a refreshing appetizer, and as a side dish it will cut through any fattiness or richness in stews or braised dishes.
