This salad has Russian origins, and it is traditionally served with a selection of hors d’oeuvres, called zakouski. A shot of vodka would be an appropriate accompaniment, but the salad could also act as a foil to grilled or roast pork.

Ingredients

  • 4 large pickled gherkins
  • 60 ml/4 tbsp sour cream

Method

  1. Slice the gherkins lengthways into quarters. Whisk the sour cream until light and foamy, then spoon on to four individual serving plates.
  2. Put the butter in a frying pan and heat until melted. Add the gherkin slices and turn in the butter until warmed, then pile on top of the sour cream.
