Mayonnaise and vinaigrette are not the only dressings for a summer salad. Homemade salad cream, such as the one in this recipe, makes a delicious alternative, and tastes much better than store-bought versions.

Ingredients

  • 2 hard-boiled eggs
  • 15 ml/1 tbsp caster (superfine) sugar

Method

  1. Cut the hard-boiled eggs in half, remove the egg yolks and reserve the whites. Push the yolks through a sieve (strainer) into a bowl, then add the sugar, salt, mustard and lemon juice and blend together.
  2. Whisk the cream in a bowl until it begins to thicken but is not stiff. Add to the egg mixture and mix to form a creamy dressing.
