Rosolli is part of the traditional Christmas table – voileipäpöytä – Finland’s equivalent of the Swedish smörgåsbord or Russian zakouski. It is served on Christmas Eve, just as the festive excitement mounts.

Ingredients

  • 1 apple
  • 3 cooked potatoes, finely diced
  • 2 large gherkins, finely diced

Method

  1. Cut the apple into small dice. Put in a bowl and add the potatoes, gherkins, beetroot, carrots and onion and season with salt and pepper. Carefully mix together and spoon into individual serving glasses or bowls.
  2. Mix any beetroot juice into the cream to flavour and give it a pinkish colour, then spoon over the vegetables and apple. Sprinkle the chopped eggs and
