Elks are large animals, cousins of the North American moose, just as reindeer are related to caribou. The meat is dark and tastes similar to venison, which can be used as a good substitute if you are unable to buy elk meat. Serve this rich, warming stew on its own or, for a more sustaining meal, with creamy mashed potatoes or lightly boiled new potatoes, and some steamed green vegetables, such as cabbage, broccoli or spinach.
