Depending on its coarseness, semolina can be used to make a range of foods, including pasta, polenta and a number of desserts, as here. Decorate the finished dish with a scattering of lingonberries for a truly stunning finale to a meal.

Method

  1. Put the water and berries in a pan and bring to the boil. Strain the liquid into a clean pan. Discard the berries or sieve (strain) them into the liquid.
  2. Put the semolina in the pan and, stirring all the time, return to the boil. Reduce the heat and simmer gently for 5 minutes, until the semolina is cooked. Add the sugar according to taste and the type of fruit
