The Åland islands lie in the Baltic Sea between Sweden and Finland. Like much of western Finland, the islanders are Swedish speaking, and have a distinctive cooking heritage that reflects their varied history of rule by Danes, Swedes, Russians and Finns. For this dessert, think of a batter or rice pudding rather than the thin wafers we normally associate with the word pancake. Serve warm with jam or fresh berries when they are in season.
