Strawberries have a delicate, fragrant taste and most desserts made from them are best eaten soon after they are made. In Finland, the dishes called snows are generally made from fresh berries, such as strawberries and raspberries, but can also be made with apples in the autumn.

Ingredients

  • 120 ml/4 fl oz/½ cup water
  • 15 ml

Method

  1. Put the water in a small bowl and sprinkle in the gelatine. Stand the bowl over a pan of hot water and heat gently until dissolved. Remove the bowl from the pan and leave to cool slightly.
  2. Put half the crushed strawberries in a pan and bring to the boil. Remove from the heat, then stir in the dissolved gelatine. Chill in the refrigerator for about 2 hours until
