Cloudberry mousse

The Arctic cloudberry is a close relative of the raspberry. They are golden-yellow in colour and grow naturally in the high northern hemisphere – Finland, Russia and Canada. The Inuits made use of their high vitamin C content to ward off scurvy and the leaves are said to have medicinal properties. As well as eating them raw and in jams, Finns make a sweet liqueur called Lakka from the berries, which can also be used to sweeten recipes.
