Dried fruits are regularly sold as mixed selections in Finnish stores, but the combination of fruits is entirely your own choice. A selection of prunes, sultanas and apples is particularly good. The soup is served with whipped cream or to accompany Christmas Rice Pudding as a Christmas treat.

  1. Put the dried fruit, water and sugar in a pan and leave to soak overnight or for about 12 hours.
  2. Add the cinnamon stick to the pan, bring to the boil, then lower the heat and simmer for 15 minutes. Remove and discard the cinnamon. Using a slotted spoon, transfer the fruit to a serving bowl.
