Sima is served on May Day, along with the sweet, crisp doughnuts, called May Day fritters (tippaleivat), and thereafter whenever you fancy. After combining tart lemon juice and rind with sugar and plump raisins, leave the mixture to ferment and become slightly alcoholic. It is very easy to make, and is ideal for sharing with friends and family at special occasions.
