Soups made from seasonal fruits are a favourite central European treat, and cherry soup is one of the glories of the Hungarian table. It is associated with Shavuot, an ancient Jewish agricultural festival where an offering of the first fruit harvest was presented to Jehovah at the end of Passover. At this time dairy foods were feasted upon, with this dish often eaten at the start of a meal. It is delicious served with an extra spoonful or two of sour cream.
