This light and slightly spiced soup made with ripe pears is an exotic choice as a light appetizer, a refreshing summer meal served with fresh rolls, or a deliciously sweet conclusion to a meal. It is an excellent option for a vegetarian, low-fat food choice. The soup can also be made with apples or plums.

Method

  1. Peel and core the pears, then slice thinly. Put the pears and 1.5 litres/2½ pints/6¼ cups water in a pan over medium heat. Add the orange rind, mixed spice and sugar. Stir in well and cook until the pears are soft.
