Puff pastry would always have been prepared by hand in the traditional Hungarian kitchen, but modern cooks should settle with the easily available pre-prepared chilled or frozen versions. Such pies might originally have been made to use up leftover gulyás, but this recipe explains how to prepare fresh gulyás if that is more convenient. Beef fillet is used here, but cheaper cuts of meat can be used. You will need six single-portion ovenproof dishes to make these mouthwatering pies.
