Making strudel pastry is a dying art, although in the depths of the countryside, Hungarian women still like to make their own at home – and there’s nothing like the real thing. Ready-bought filo pastry is the next best thing, however. A true strudel should be fine, crisp and light, with very thin pastry filled with fruit. Cherries are among the most common fillings for a strudel.
