Kharcho is a redolent soup as thick as a light stew. Its name is almost generic, referring to beef, lamb, chicken, or even vegetable stocks. But common to all kharchos are a special mixture of khmeli-suneli, a liberal dose of herbs, and a souring agent such as a fruit leather, tkemali sauce, or vinegar. Kharcho is so popular in Georgia that some soup kitchens devote themselves entirely to its preparation.
