It may come as a surprise that khashi, Georgia’s best-loved soup, is made from tripe. At one time the Georgian nobility disdained this soup, considering it fit only for peasants. But soon they noticed that the peasants, who regularly ate khashi upon rising, never suffered the effects of hangovers.
