Beans were introduced from Turkey in the late sixteenth century and subsequently became a staple of Georgian cuisine. The word chorba also made its way to Georgia via Turkey. In Georgia, red kidney beans are most often served as a seasoned purée, but here they are coupled with vegetables and herbs to yield a thick, invigorating soup. Lobios chorba keeps for up to a week in the refrigerator.
