These Georgian-style hamburgers, eaten plain without bread, are fruity with raisins. Arranged in radiating circles on a platter, gupta make an elegant entree for the buffet table.

Ingredients

  • ¾ pound stewing beef (or use leftover cooked beet)
  • 4 tablespoons (½ stick) butter

Method

Bring the beef to a boil in cold salted water, skimming any foam that rises to the surface. Simmer, partially covered, for 1 hour, or until tender.

In a skillet melt 2 tablespoons of the butter. Stir in ¾ cup
