Khinkali are made with a variety of fillings. In the mountains the choice is usually ground lamb, since that is most readily available, but elsewhere the filling is more often a mixture of beef and pork. The dumplings may also be stuffed with cheese or greens. Although many villages claim their khinkali are best, due to the mineral waters from local hot springs, khinkali from the town of Pasanauri, north of Tbilisi, are generally acknowledged as superior.
