The dressing for this simple salad is similar to a French vinaigrette, though zestier. Use very fresh, tender beans.


  • 1 pound young green beans
  • 1 large garlic clove, peeled and minced
  • ½ cup


Trim the beans and cook them in boiling salted water until just tender, about 8 minutes. Drain well and mix with the remaining ingredients. Chill for several hours, but bring to near room temperature before serving.
